Caroline vs. Avocado Basil Pasta

I caved and got Pinterest recently, and have been pinning recipes like crazy.  I'm great at following a set of instructions but I'm not very innovative in the kitchen, so having all these new recipes right at my fingertips is awesome.

For dinner tonight I decided on this avocado basil pasta, which looked very appealing in the photo.  Besides, what's not to love about a dish that includes avocado AND bacon?  This dish was also easy for me to put together - I had most of the ingredients in my kitchen already, and there were only two steps.  Cooking for the lazy, my favourite!

I halved the recipe since the recipe serves four and I was only cooking for two, but I overestimated the quantity of pasta (luckily my boyfriend's stomach is a bottomless pit and he was able to finish it) and the avocado (it was quite large but the mushier of the two I had, so I wanted to use it before it went bad).

The recipe actually called for bow-tie (farfalle) or wagon wheel (rotelle) noodles, but I used cavatappi instead because it was on sale at Metro.

Once all the ingredients are assembled, all one has to do is:

  1. Boil water.  Put pasta in the water, bring back to boil.
  2. Put the other ingredients in a bowl.  Mix with pasta once it's ready.

Verdict: I thought this was super delicious!  In the future I would probably use less pasta and avocado and more bacon and lemon juice.  For presentation's sake it would also probably be best to put the avocado and bacon (and maybe cheese) after the pasta is mixed with the rest of the ingredients.  My version looked sort of like a brain.  But all in all, I would call this dinner a success.  I didn't even set off my fire alarm once!
